Anti Inflammatory Smoothie

This is my thirst quenching smoothie of the moment.... This recipe will make 3 medium to large smoothies and is easily adjusted by adding more liquid. Pineapples are a great source of bromelian, an enzyme that aids the body's natural anti-inflammatory response. Combined with the vitamin C of oranges this is my replacement for pain and inflammation during pregnancy when my usual go to of ibuprofen is not an option! A perfect summer post workout elixir!
Pineapple Orange Anti-inflammatory smoothie!
· 1/2 Fresh Pineapple
· 1 whole orange
· Juice of one fresh coconut * see note
· 2 generous handfuls ice
· A handful of mint
*2 cups coconut water, any fruit juice or water works if you don't have coconut water on hand. Scoop out the coconut flesh for a creamier smoothie!
For the silly season - add a nip of vodka!
For the kids - freeze any left over mix into ice block moulds for a healthy summer treat
